This is a recipe from my childhood, is incredibly easy and quick to make – perfect for making with the kids.

*update* Rosalie and I made these quite successfully together – she helped with the weighing and I did all the stove-top stuff. She also did a good job of licking the spoons, bowls, pans and eating the trimmings!

An incredibly simple recipe, easy enough to make with the kids, and perfect for picnics or lunch boxes.

  1. 120g margarine
  2. 60g granulated sugar
  3. 120g self raising flour
  4. 60g desiccated coconut
  5. 1 tbsp cocoa powder
Fudge icing
  1. 1 tbsp cocoa powder
  2. 2 tbsps milk
  3. 60g butter
  4. 120g icing sugar
  1. Pre-heat the oven to 160c (fan), then grease a 26cmx20cm baking tin.
  2. Melt the margarine and sugar in a saucepan over a low heat.
  3. Whilst the butter is melting, weigh out and mix together the flour, coconut and cocoa, then stir into the melted margarine and sugar.
  4. Scrape out the pan and press the mixture into the greased tin and cook in the oven for 18 minutes.
  5. Whilst the base is cooking, melt the butter, cocoa and milk together in a pan over a low heat. Once melted, remove from the heat and beat in the icing sugar gradually until smooth.
  6. Once the base is cooked ice it immediately - the heat from the base will make it easier to spread the icing around.
  7. Once iced, leave to cool for around 10 minutes then cut into pieces.
  1. This recipe should yield 6 large slices or 12 squares. To cut up, lift out using a fish slice onto a board and slice using a large knife, wiping the knife inbetween cuts to get clean edges.
