Today is Jim’s birthday, so I decided to make him Mary Berry’s Divine Chocolate Birthday Cake. It’s a strange one, because it uses no flour or butter, the main cake ingredients are just eggs, sugar, chocolate and ground almonds.
I was a little concerned when it came out of the oven that it wasn’t very tall, and once decorated it didn’t look terribly impressive, but it sure did deliver on its name – it was divine! Almost dessert-like in it’s richness and consistency, quite similar to a chocolate fudge cake. A spoon of ice cream on the side would have been just enough to take the edge of the richness.
