I thought I would choose a sturdy lunch box appropriate cake this week, so I picked Pound Cake, a round fruit cake with no icing or fancy trimmings.
It looks a little plain, and I was disappointed that the fruit sunk (perhaps I didn’t dry my cherries well enough), but it has got a really good flavour. I’ve never thought of myself as the world’s biggest fan of fruit cakes, but since taking on this challenge I am beginning to warm to them!
I made this cake first thing after breakfast, and left it in the oven whilst we went out to run some errands. Two hours later we returned to a delicious smelling house and a finished cake, just in time for me to sample with my lunch!
