We don’t generally go in for puddings on a regular basis, but as it was a long bank holiday weekend (in other words we were on holiday) I decided to treat the family to steamed Syrup Sponge Pudding.
I slightly cheated my challenge here as Mary’s recipe is for four individual puddings, but I don’t have individual sized pudding basins, so I just made one big one! Mary’s recipe uses lemon – rind in the cake and juice with the syrup, and I thought this added an extra dimension to the flavours.
We had ours with lashings of custard, as is really the only way to eat steamed sponge pudding! I can remember my mum making this when I was younger and it being one of my favourites, and after this weekend, I think it still is.
