I don’t actually like marmalade, but I thought surely one tablespoon of it in a cake can’t be too overpowering can it?
Luckily I was right! To be honest, I don’t think you’d know this cake had marmalade in at all, it just seems like any other fruity loaf cake to me. The recipe gives the option of topping the cake with either warmed marmalade or caster sugar, and I opted for the sugar.
I’ve been pleasantly surprised by all the fruit cakes I’ve made so far as part of this challenge; before I would have said that I definitely am not a fruit cake person, but you know a cake with fruit in does not a fruitcake make! This cake is not dark and it’s not heavy and you can still taste cake between all the fruit.
Oh, and by the way, this cake has cherries in it and although as always Mary tells you to quarter, wash and thoroughly dry them, after consulting my mum following a previous recipe, I did not wash my glace cherries, I simply chopped them and dumped them in along with the other dried fruit. And you know what? I think the fruit distribution in this cake is pretty good.
