Bake number 58 of 219 is Mississippi Mud Pie! I was a little apprehensive about attempting this after a previous disaster with a baked cheesecake, but following some advice I lined my tin with foil and crossed my fingers. It seemed to work as neither the base nor the filling leaked, and it came out of the tin easily and cut really nicely.
I made it to serve for pudding a few weekends ago when my family came to visit and neglected to take a photo of a slice, but everyone seemed to enjoy it; it’s quite rich so you don’t need a very big piece. Excuse my haphazard piping, done in a bit of a rush!
