My first bake from Mary Berry’s Baking Bible Challenge for 2016 was this Devil’s Food Cake, which I made for Jim’s birthday. I have to say, I was really disappointed with the way the American frosting turned out (I have never made American frosting before). I don’t have a sugar thermometer so I used Mary’s ‘instant’ American frosting recipe which involves whisking the egg whites, sugar and water in a bowl over a pan of hot water. It seemed straight forward enough, and I did take heed of Mary’s warning about working quickly due to the frosting setting quickly, but it just didn’t work for me. There didn’t seem to be enough frosting to cover the top and sides of the cake, so I ended up having to scrape some from the top to finish the sides, which resulted in this grainy textured icing, rather than smooth soft peaks.
Well, I am trying not to be too hard on myself since it was the first time I’d made American frosting, and it means that next time I will know what to expect and what not to do! And anyway, the look of the frosting didn’t adversely affect the taste so all was not lost.
Jim was very pleased with his birthday cake (not that he’d dare say otherwise!), and we all enjoyed a slice of the dark, incredibly moist cake with it’s crispy white frosting. Maybe I’ll try making it again someday and see if I can get the frosting just right.
